Mango Fool

Mango Fool

Serves 6 | Time: 5 minutes

Mango. Cream. Sugar. Vanilla. A little mashing. A little whisking. The Mango Fool is arguably the easiest, fancy-tasting dessert to make and serve. Present in a martini glass if you want to impress, but truthfully, this dessert really wows with its flavor.

A little tip: Use ripe mangoes for this recipe because they tend to be sweeter and softer. Also use a mango that does not have any fibers in its meat. The Julie mango (also known as Saint Julian) is perfect for this recipe.

Ingredients:

2 cups of fresh mango (about two ripe mangoes)
1 cup heavy cream
1 tbs sugar
1 tsp vanilla

Preparation:

Prepare the mangoes by removing the skin and then by sectioning the meat of the fruit into half-inch squares. Place half of the fruit into a container and mash with the back of a spoon.

In another container, whisk the cream, sugar and vanilla until you get a firm consistency. Gently fold in all the mangoes into the cream and serve.

Mixture will stay fresh in the fridge for up to three days if placed in an airtight container.
